So forget what I wrote yesterday. As I played with the pull-down menu version of the toolbar on the iPhone, I realized that it just wasn't working.
So today I've removed that, and have gone to a two-row version of the toolbar for the iPhone and other mobile devices. The 4x2 buttons are big enough to tap and work a lot better than the pull-down.
I think this will finally get the game working as I envisioned it on the iPhone.
